Oh My God!!!!!!!So I got my babycakes on fri. night and decided to try one piece of a cake that is called "Fatpants" that should have said it all. Well I got myself a glass of milk and a fork and decided to try it. It was so delicious, it was a chocolate cake with white icing, I do not know much about since my fiance was the one who picked it out for me (I was not there) All I know was that it was by far the best cake I have ever had. I ate it slowly and savored each bite because I knew I would not have another one for a while. This cake is serious, and I have already request a "Fatpants" cake for my birthday. Even though I am not sure I can wait until then, my birthday is June 27th!

Babycakes
So my fiance just called me and told me that he is probably taking a trip into NYC this weekend to hang out with some of his friends. As soon as he tells me this there is one thought that pops into my head......BABYCAKES. If you have not had the pleasure of going to Babycakes then you are seriously missing out. I live on the east end of Long Island so it is a rare treat for me to have Babycakes, but when I do I go all out. Since he will be going there by himself I will have to give him a list of what to get. (their products freeze well, so I can buy a lot and just thaw out what i want at the moment) Some of my favorites are the Apple Cinnamon Muffins (which actually have large chunks of apples cooked inside them), the blueberry crumb cake (crumb cake being one of my favorite pre-celiac treats), and another great is the Banana Chocolate Chip loaf. This bakery has delicious gluten free products and they are also really good for you at the same time, gotta love it....I CANT WAIT!
Peanut Butter Madness
I woke up today in the mood for something sweet. Living life as a celiac I can not always go to the store and buy a box of cookies. So I figured I would make my favorite gluten free cookie recipe. Chocolate Chip Peanut butter cookies. Lets just say i memorized the recipe while I was Pregnant! I craved them like nothing else. Sometimes I would even make a batch a day (might explain why my son was almost 9 lbs. at birth..hahaha). It is the easiest recipe and I thought I would share it.
Flourless Peanut Butter- Chocolate Chip Cookies
1 cup firmly packed brown sugar
1 cup chunky peanut butter
1 large egg
1 tsp. baking soda
1/2 tsp. vanilla extract
1 cup milk chocolate morsels
1. Stir together first 5 ingredients in a medium bowl, using a wooden spoon. Stir in chocolate morsels.
2. Drop cookie dough by rounded tablespoons onto a parchment paper lined baking sheet.
3. bake at 350 degrees for 12 minutes or until puffed and golden. (cookies will be soft in the center) Cool 5 minutes on baking sheet- remove to wire rack
* Can also add 1 cup coarsely chopped lightly salted peanuts.
